"Across the Bridge" noodles

We had been told by a friend to be sure to get this dish if we ever had the chance. The story goes something like this: a woman used to bring dinner to the man she loved, but she lived across a very long bridge from him, and so she would gather all the ingredients together, and then at the very last minute, get the hottest broth she could and run all the way across the bridge to get it to his house, where she would throw in all the ingredients and they would get warm and then she could serve him a hot dinner. So you can guess how it is served: they bring you a plate of the ingredients you order (whatever meat you want and then they have all the onions, seasonings, etc.), and then the noodles, and then a steaming (almost boiling) bowl of broth and add everything together in a big bowl (think: large mixing bowl size). It is delicious!!! (Baxter REALLY thought so... but that's no surprise... they're called rice noodles, and he is our little "rice man") ...check out his excitement over this great new food:Then we went around the corner for a little walk and Ethan & Baxter made a new little friend that wanted to hug the boys a lot.
